Nine Ridges is a Truffliére located in the Hilltops region of New South Wales and was established in 2014 with an initial planting of over one thousand Quercus robur (English oak) trees, inoculated with Tuber melanosporum (Black truffle). This was followed by a second planting of approximately eight hundred Quercus ilex (French oak) trees in 2017.

Production of Tuber melanosporum (Black truffle) at Nine Ridges commenced in 2021 with the first one harvested on the morning of the 6th June.
