Black Truffle, also known as Tuber melanosporum, graded as Second Glass according to the Australian Truffle Grading Standard.
Truffle in this class will be mainly pieces or whole truffle that may contain surface imperfections.
They may not be sufficiently mature with a grey gleba (flesh) but will have some aroma which is firm to the touch.
Although below the quality of First and Extra Class Truffle, they are suitable for infusions and delicate food products.
